Why doesn't GrillMeater probe's ambient sensor match my cooker?

In most cases, built-in thermometers in cooking appliances measure the temperature in a different location from where you put your food,  And, there are usually hot and cold spots in the cooker, instead of having one consistent temperature throughout the whole BBQ/grilling process.
That's why it's important for GrillMeater's ambient sensor to read the temperature right at the thicker end of the probe. It tells you the actual temperature your food is exposed to and helps to calculate a more accurate cook time.
